Fermentation and maceration in stainless steel tanks for 2 weeks at a controlled 28°C followed by malo-lactic fermentation in 500 litre oak casks
Aging
Around 20 months in 500 litre oak casks, followed by 12 months in glazed terracotta amphora and a further 18 months in the bottle
Characteristics
Colour: garnet red
Bouquet: intense and elegant, with notes of black plums and blackberries, with hints of cinnamon and juniper berries
Flavour: full and velvety, very fine-grained tannins and a long, persistent finish
Notes
Accompanies important first courses, red meats, roasts, game and cheese. Very suitable for long ageing
