Vinification

soft pressing of freshly harvested grapes, spontaneous fermentation at 28°C with maceration on the peels for approximately 12 days. Spontaneous malolactic fermentation carried out in stainless steel. The aging continues for a few months in small French oak barrels before bottling

The Freisa grape variety, although not one of the most well-known or widespread in the Langhe region, manages - when there is an auspicious combination with a vineyard’s soil and its peculiar microclimate - to yield wines of great uniqueness and elegance.
