Grape

Nebbiolo

Vineyard

Carella, Baraggiola Valera and Cavenago

Breeding system

Counter espalier with Guyot pruning

Soil characteristics

Hills formed in the interglacial stage by the Monte Rosa moraine (the second highest peak in Europe). The soil is very rich in minerals thanks to the considerable crumbling of the rocks

Altitude

280 – 310 metres above sea level

Grape harvest

Mid October

Wine-making

Grapes were destemmed and then delicately pressed. Fermentation was at a controlled temperature of 30°C. During fermentation repassing was carried out twice a day until the sugar was completely transformed. After this a submerged hat fermentation followed

Ageing

The wine was transferred to oak casks for about 20 months before being bottled. The bottles were then stored horizontally for refining

Longevity

Over 15 years

Wine tasting

The colour is a beautifully clear ruby-garnet red. The scent is intense and persistent / lingering, refined and ethereal and reminds us of resin, violets, faded / withered roses and raspberries. Dynamic vitality is expressed through its taste. It is dry and tannic and has a warm body making it pleasant to the palate

Food combinations

Exalts roasts, braised meats and game

Tasting temperature

18° C. Serve in large goblets, making sure to oxygenate

The name of the wine

Cantalupo is our name, our figure, our faith, our enthusiasm, our gratitude for being born, for living and for being the completing part of this astounding terroir
