Growing notes

vineyard planted in 1975; 2 hectares. Low Guyot pruning, spacing of 3,500 vines per hectare

Harvest

first half of October; hand picking, with careful bunch selection

Vinification

soft press with destemming. Fermentation and maceration in 50 hectaliter oak vats for 10 days, with frequent spraying of the skins, at the controlled temperature of 25° C

Ageing

in medium capacity (15 to 30 hectaliter) French oak barrels for one year, with only essential transfer between barrels. The wine is not clarified or stabilized in any way, chemical or physical, before bottling. Bottle aged for 6 months minimum

Organoleptic characteristics

Color: Ruby red, gaining garnet highlights with ageing

Nose: delicate and subtle, recalling raspberry and violet

Flavor: Dry, robust, fairly tannic when young, velvety, harmonious

Food pairings

risottos, light fried dishes, fonduta, white meats, roasted meats and wild game

Serving suggestion

Best tasted in large glasses which help oxygenation and concentrate its nose. Recommended serving temperature of 16-18° C

Storage

Store bottles on their side in a dark place, at the most constant temperature possible
