Vinification & Ageing
Gentle destemming and pressing followed by a brief maceration in the press (about 4 hours). Fermentation in stainless steel with selected yeasts. Aged on fine lees in steel for around eight months, with regular bâtonnage. No malolactic fermentation. Static clarification
