Vinification

Starting with a slightly late harvest it then gets placed in the cellar for the drying process. Alcoholic and malolactic fermentation done in French oak barrels, followed by 96 months of aging. Finally, bottle aging for 3 months

Bouquet: aromas of grapefruit peel, ginger, aromatic herbs and honey

Taste: precise and sharp, with hints of vanilla, ripe citrus and pear, slightly sweetened by notes of honey and maple syrup
