Vinification

Grapes must be de-stemmed and crushed, followed by a cold maceration of grape skins and alcoholic fermentation in steel at a controlled temperature between 16 - 18 degrees centigrade. The wine matures for six months in stainless steel containers on top of its own fermented lees

Bottling

After bottling, normally taking place in the spring following the grape harvest, the wine ages in the bottle for 2 months
