the vineyard is located in Castagnole Monferrato and grown in guyot system. Exposition is East. Altitude 200 mt a.s.l.

Harvest

cluster thinning in July/August and hand crafted harvest in October

Wine making process

after destemming and pressing, the submerged cap maceration follows for 15 days. Fermentation takes place in steel tank at controlled temperature (27/28°C). After the alcoholic and malolactic fermentation, the wine is transferred into a big barrel of French Allier of 25 Hl, where it remains for 12 months. Finally, after bottling, the wine will remain in bottle to age for additional 6 months before distribution

Characteristics

elegant and fine wine, result of a careful care of our Vineyard of Nebbiolo located in Castagnole Monferrato in the hill of Sant'Eufemia, recently awarded as UNESCO site. The colour is garnet red. The wine has a spicy nose togheter with a balanced tannic texture, with hints of  ripe fruit, fig and plum

excellent with tradition first courses such as risotto with mushrooms or sausages or a dish of noodles with meat sauce and perfect to pair with game and seasoned cheese
