Wine-making

the grapes are delicately removed from their stalks and softly crushed, processing the wine with controlled temperatures. The introduction to the vats of the elevated percentage of whole grape bunches has the purpose of enriching the range of fermentation fragrances. The drawing off of the wine is done before the total transformation of the sugars with the purpose of having a good amount of anthocyan (the polyphenol responsible for the red colour) and a contained level of tannins

Refinement

done incontainers of inoxidizable steel and afterwards in bottles, which are laid horizontally

Longevity

for 2 or 3 years pleasantly maintaining its freshness

Wine tasting

the colour is bright ruby red. The scent is fresh, intense, complex, delicate and persistent, typically fruity. The flavour reveals a pleasant freshness. It is also justly tannic, smooth, expressing a delicate refinement, which does not betray the noble origins of Ghemme’s grapevines, maintaining its spicy, delicate taste

Food combinations

very suitable for light meals, as well as, first courses, white meats, and certain varieties of fish. It is also ideal for those wanting to accompany the whole meal with a fresh and easily likable wine

Tasting temperature

not more than 15° C. During the summer season, it is even better drunk cooler
