Hills of central-western Sicily, province of Trapani for the grillo variety, hinterland of Palermo province for the viognier variety

Vertical shoot positioning trellised vines with medium-high plant density per hectare (approx. 4,500 units)

Climate

Mild winters with hot and dry springs and summers

Harvest

By hand, before end August for Viognier and before mid September for Grillo

Vinification

Soft pressing of grapes and use of only first-pressing must, fermentation for more than 10 days at 16°C following long contact with yeasts

Ageing

In late november the two wines are blended and left to rest until February in order to complete their particular bouquet. At least one month in bottles at controlled temperature

Tasting Note

Colour: straw yellow with greenish tints

Bouquet: intense, delicate with complex fruity, floral notes with exotic fruits dominant

Flavour: intense, full with notes of ripe fruit

Alcohol Content

11,5 % - 12,0 % vol

Serving Temperature

10° - 12° C

Recommended With

Ideal as aperitif and excellent with seafood, fish dishes in general and underripe cheeses
