Since vintage 2012, a new white wine “Castella” with 100% Sauvignon Fumè. The grapes after a soft pneumatic press, to make a fermentation in inox tanks at 20°/22° of temperature, and after to have 4 months at contact with the nobil yeasts. This is a fresch, young and aromatic white wine, very good for aperitif and with fish and white meat. Best served at 10°C
